What could be better? Two gifts in one, a yummy "cup cake" in a keepsake mug.
4 to 6 coffee mugs
1 cup sugar [200 g[
½ cup butter, softened [114 g]
2 eggs (room temperature)
2 cups flour [260 g]
2 tsp baking powder
¼ tsp salt
2/3 cup milk [168 ml]
1 tsp vanilla
1 can prepared chocolate or vanilla frosting


Preheat oven to 350°F. Grease and flour the insides of the coffee mugs. In a large bowl, cream sugar and butter until light. Add eggs, one at a time, beating well after each addition. In a small bowl combine the flour, baking powder and salt. Stir the vanilla into the milk. To the butter mixture, alternately add the dry ingredients and the milk, beating until thoroughly combined. Pour into mugs about ¾ full. Space mugs evenly on a baking sheet.
Bake 20-25 minutes or until a toothpick inserted in the center of the cake comes out clean. Place mugs on wire rack to cool completely. Use a knife blade to gently remove cakes from mugs. Wash and thoroughly dry mugs. Return cakes to mugs and frost.
