1 cup [250 ml] red wine vinegar
1 cup [250 ml] water
1 onion -- sliced
2 garlic cloves -- minced
8 cloves
6 parsley sprigs
2 bay leaves
2 celery ribs w/leaves -- chopped
2 juniper berries -- crushed
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried basil
1 tablespoon brown sugar

Combine all ingredients in a bowl.

Makes about 3-1/2 cups. [875 ml]
