Although I don't like getting up in the morning, I'm definitely more of a morning person than a night owl. I can barely stay up past 10:30 most days! Once I get up and moving I'm good to go, and I enjoy starting the day off slowly by checking my email and having a cup of coffee. One thing is for sure, I am definitely addicted to coffee and can't live without it!
If I'm out an about in the morning I typically swing by McDonald's for a McCafé coffee. {I love the McCafé Caramel Mocha and their iced coffees!} Whatever drink I choose, it always puts me in a good mood and gets my day off to a great start.
I was grocery shopping recently and was so surprised and excited to see that McDonald's now offers McCafé packaged coffee! Now I can enjoy my favorite drinks at home, as well as at my local McDonald's. McCafé packaged coffee comes in both ground and K-Cup® pods, which is perfect since I have a Keurig.
I enjoy having a sweet treat with my morning coffee, so I made a batch of easy and delicious Chocolate Dipped Coconut Biscotti. Lightly sweet and crispy, they are a perfect match for my McCafé coffee. I love to dunk them until they get soft and start to fall apart!

Chocolate Dipped Coconut Biscotti

Ingredients:
1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon allspice
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup unsweetened coconut flakes
1 cup dark chocolate melting wafers
Preheat the oven to 325 degrees. In a medium bowl, whisk together the flour, baking powder, salt, baking soda, and allspice.
In the bowl of a stand mixer, beat the sugar, eggs, and vanilla until thick. Add the flour mixture to the wet ingredients and mix well, then add the coconut. The dough will be very sticky.
Turn the dough out onto a floured surface and knead lightly 5 or 6 times until it comes together. Shape the dough into a 15-inch long roll. Place the roll on a baking sheet lined with parchment paper or a baking mat and pat to 1-inch thickness. Bake for 40 minutes or until the top is golden brown. Cool for 5 minutes on a wire rack.
Cut the roll on the diagonal into 16 slices. Stand the slices upright on the prepared baking sheet. Bake for 20 minutes. Remove the biscotti from the baking sheet and cool completely on wire rack.
Melt the dark chocolate in a small bowl in the microwave until it's completely smooth. Dip one end of each biscotti into the bowl until it's covered in chocolate; tap off any excess. Sprinkle the chocolate with additional coconut flakes, if desired. Place the cookies on a sheet of parchment paper until the chocolate is set.
