Instructions Season lamb loin chops with salt and pepper. Dredge lightly with flour. In skillet, cook lamb in oil and butter for about 2 to 3 minutes on each side, until preferred doneness. Remove from skillet and keep warm.
Pour wine in skillet while scraping bottom with a spatula. Simmer for 3 minutes while stirring. Stir in mustard and cream. Reduce heat to low and simmer until sauce thickens. Correct seasoning and remove from heat. Serve lamb over sauce with fresh pasta and Brussels sprouts.
