Turkey Croquettes with Honey Barbecue Sauce

Yields 4 to 6 servings

1 1/2 lb (750 g) cooked turkey chunks
Salt
Pepper
3 eggs, beaten
3 tbsp (45 ml) cream 35 %
1 cup (112 g) breadcrumbs
Vegetable oil

Honey Barbecue Sauce:
2/3 cup (192 g) ketchup
1/4 cup (60 ml) white vinegar
1 tsp (5 ml) sugar
1 tsp (5 ml) dry onion flakes
Salt
Pepper
2 tbsp (30 ml) liquid honey


Instructions
 
Season turkey pieces with salt and pepper.

In bowl, whisk eggs with cream. Place breadcrumbs in other bowl. Dip turkey chunks in eggs and roll in breadcrumbs to coat evenly. In skillet, sauté turkey chunks in hot oil for 2 to 3 minutes on each side. Remove from heat and drain on paper towels. Keep warm. Repeat process with remaining turkey.

Serve croquettes on a bed of lettuce with homemade French fries. Serve with Honey Barbecue Sauce.

Honey Barbecue Sauce:
In small saucepan, bring all ingredients to boil, except honey. Season to taste with salt and pepper. Reduce heat and simmer for 15 minutes, stirring occasionally. Remove from heat and stir in honey. Pour in bowl and serve.
