Spring Frittata with Asparagus and Bacon

1 pkg 14 oz (425 g) President's Choice Rustic White Bread à l'européenne
1 bunch of approximately 12 asparagus, woody ends trimmed
7 slices President's Choice Fully Cooked Bacon, chopped (1/2 65 g pkg)
4 eggs [220 g]
1 1/2 cups (375 ml) milk
1 cup (250 ml) thick 15 % cream
1 1/2 cups (375 ml) shredded President's Choice Canadian White Cheddar cheese, Aged One Year
Salt
Pepper, to taste
Cherry tomatoes, optional


Instructions

Preheat oven to 350 °F (180 °C). Cut bread into 1/2 inch (1.5 cm) cubes. Cut asparagus into 1 inch (2.5 cm) pieces. In large bowl, stir together bread cubes, asparagus and bacon.

In another bowl, whisk together eggs, milk, cream, and 1 cup (250 mL) Canadian cheddar. Season with salt and pepper. Pour over bread mixture, tossing to coat well.

Pour mixture into 8 inch (20 cm) square buttered baking dish. Sprinkle top with 1/2 cup (125 mL) Canadian cheddar.

Bake in centre of oven until golden, 40 to 45 minutes. Garnish with cherry tomatoes, if desired, and serve.
