Yields 4 tournedos
4 chicken tournedos
2 tbsp (28.4 g) butter
Salt
Pepper
1/4 cup (50 ml) dry white wine
2 tsp (10 ml) hot mustard
2 tsp (10 ml) maple syrup
1 tsp (5 ml) poppy seeds
Instructions In skillet, sauté chicken tournedos in butter over medium-high for 5 to 6 minutes on each side. Continue cooking until cooked through. Keep warm. Season with salt and pepper to taste and remove chicken from skillet. Pour wine in skillet while scraping bottom with a spatula and simmer until reduced to half.
Reduce heat to medium-low. Stir in mustard and maple syrup and remove from heat.
Place chicken tournedos in 4 plates and coat with sauce. Top with poppy seeds and serve immediately with steamed green beans and home-fried potatoes.
