3 pork tenderloins, trimmed of fat
Salt

4 kiwis, peeled and mashed
1 1/2 cups (150 g) grated Canadian Gruyère cheese
2 tbsp (28.4 g) butter
Instructions Cut each pork tenderloin in 4 thick slices. Cover slices with wax paper and pound lightly with meat mallet or a cast-iron pan until slices are 3-inch (7.5 cm) wide. Season to taste with salt and pepper.
Spread each pork slice with kiwi purée and sprinkle with Canadian Gruyère cheese. Roll up pork slices and secure with toothpicks or thin string. In skillet, cook pork rolls in butter for 4 to 5 minutes on each side. Serve two rolls per person with a green salad and wild rice.
