2 boneless skinless chicken breasts, cubed
1 cup (250 ml) apple juice
1 tsp (5 ml) ground ginger
2 apples, peeled, cored and quartered
16 pitted black olives
8 wet bamboo skewers
Mango Sauce:
Flesh of 1/2 mango
1/2 cup (112 g) sour cream
1 tbsp (15 ml) chopped chives
Salt
Pepper
Instructions In large bowl, mix together chicken cubes, apple juice and ginger. Mix well and refrigerate for 3 hours. Thread chicken cubes, apple quarters and black olives alternately onto skewers. Grill over medium heat for 15 to 20 minutes, turning skewers several times and brushing brochettes with marinade.
Serve two brochettes per person with Caesar salad and Mango Sauce.
Mango Sauce:
In food processor, purée all ingredients. Refrigerate.
