Yields 4 to 6 servings
1 lb (500 g) penne
Olive oil
Salt
pepper
4 chopped green onions
2 apples, peeled, trimmed and diced
4 oz (112 g) soft Canadian Blue Ermite cheese, crumbled
1/4 cup (25 g) coarsely chopped walnuts
Instructions Cook penne according to cooking instructions on package, until al dente. Drain and return to saucepan. Sprinkle with olive oil and season with salt and pepper. Mix well. Stir in remaining ingredients.
Cover and let stand for 5 minutes before serving. Serve with legume salad.
