Alpine Potato, Ham and Canadian Swiss Gratin

2 lb (1 Kg) baking potatoes, thinly sliced, divided (about 6 cups/1.5 L)
1 large onion, finely chopped
6 oz (168 g) thinly sliced cooked ham
1 1/4 cups (310 ml) chicken broth
2 tbsp (28.4 g) all-purpose flour
2 cups (224 g) shredded Canadian Swiss* cheese


Instructions
 
Preheat oven to 375 °F (190 °C).

Layer half the potato slices and half the onion in a 13 x 9-inch (33 x 23 cm) baking dish. Sprinkle with salt and pepper.

Arrange ham slices evenly over potatoes. Top with a second layer of potatoes and onions. Sprinkle with salt and pepper.

In medium saucepan, whisk chicken broth and flour together until smooth. Cook and stir over medium-high heat until mixture boils and thickens; pour over potatoes and ham in baking dish. Sprinkle Canadian Swiss cheese evenly over surface.

Bake uncovered for 60 to 70 minutes or until potatoes are tender and cheese is browned. Let stand 5 minutes before cutting and serving.

*For a change of taste, use your favourite blend of shredded Canadian Cheeses.
