On a hot summer day, what's more refreshing than an ice cold drink? When that drink is full of delicious sweet cherries and creamy coconut milk, I say not much! This Sweet Cherry Coconut Cooler has quickly become my new favorite summer drink. It's similar to a smoothie, but not as thick, so I prefer to call it a cooler. Because that's exactly what it does. It cools you off.
The first time I concocted this little drink and shared some with my kids, they were floored. They couldn't believe how delicious and fresh it tasted. They slurped it up in no time and asked for more! The best part is, it's made with only three ingredients! Stemilt Dark Sweet Cherries, coconut milk, and plain Greek yogurt. That's it!
I was contacted by Stemilt not too long ago and asked if I would help launch their very first curated box service. And well, of course I said yes! Although this service is new, the Stemilt company is not. The dark sweet cherries were possibly the biggest cherries I've ever seen! We have amazing cherries here in Michigan, but I still don't think I've ever seen ones this big. And they were a deep purple color. So beautiful. And now that I've made myself both hungry and thirsty, I think I'll leave you with this simple recipe while I run off and make myself another cooler! Sweet Cherry Coconut Cooler

Ingredients:
1/2 cup coconut milk
1/4 cup plain Greek yogurt
1/2 cup Stemilt Dark Sweet Cherries, pitted
6 ice cubes
Unsweetened coconut flakes, for garnish
2 Stemilt Dark Sweet Cherries, for garnish
Add the coconut milk, yogurt, 1/2 cup of cherries and ice to the jar of a blender and blend on high until smooth. Pour into two glasses and sprinkle a few coconut flakes on top of each, if desired. Add a cherry to the edge of each glass for garnish, if desired. Serve immediately.
