HALIBUT WITH ORANGE SAUCE

1-1/2 lbs halibut steaks [750 g]
3/4 cup orange juice [188 ml]
3 green onions, diagonally sliced
2 TBSP lemon or lime juice
3 TBSP oil, divided
1/2 tsp ground ginger
1/4 tsp salt
seasoned flour
orange slices

Place halibut steaks in shallow baking dish. Combine orange juice,
green onions, lemon juice. 1 TBSP oil, ginger and salt. Pour over
halibut; marinate at least 30 minutes.

Dip halibut in seasoned flour. Saute in remaining oil until the halibut
flakes. Turn steaks halfway through cooking time. Remove halibut and
keep warm. Add marinade to the skilled and reduce to half the volume.
Pour over halibut. Garnish with orange slices. Serves 4
