Extraterrestrial Tuna Sandwiches

Small pitas stuffed with tuna filling make delicious and fun flying saucers. You'll need two bags (each 6 oz/175 g) of mini pitas.


Ingredients

2 cans (each 6 oz/170 g) tuna, drained
1 rib celery, diced1
1 rib celery, diced
1 carrot , diced
1/3 cup light mayonnaise [75 g]
3 tbsp pumpkin seeds
12 seedless green grapes, quartered
1/4 tsp salt
1/4 tsp pepper
24 mini (2-1/2-inch/6 cm) whole wheat pita pockets

PreparationIn bowl, combine tuna, diced celery, diced carrot, light mayonnaise, pumpkin seeds, grapes, salt and pepper. (Make-ahead: Cover and refrigerate for up to 24 hours.)

Cut 2-inch (5 cm) circle from 1 side of each mini pita to make container. Spoon rounded 1 tbsp (15 mL) tuna mixture into each pita.
