Makes: 2 Cups

1 ½ C plum tomatoes, chopped
1 avocado, peeled & chopped
¾ C sweet red pepper
¼ C red onion, minced
2 Tbsp fresh cilantro
1 Tbsp red wine vinegar
1 Tbsp olive oil

Combine the ingredients.
Mix well.
Serve.
