Chicken salad doesn't always inspire, but this one, dotted with crumbled blue cheese and crisp bacon, certainly does. Try it on your favourite bread as a sandwich, or serve a scoop on salad for a gourmet light supper.

Portion size 2 large wraps or 4 small wraps

Ingredients
3 slices bacon
2 cups (500 mL) cubed cooked chicken
1/2 cup (125 mL) grape tomatoes or cherry tomatoes, quartered
1/3 cup (75 mL) crumbled blue cheese
3 tbsp (45 mL) light mayonnaise
2 large whole wheat tortillas, (or 4 small)
2 cups (500 mL) baby arugula leaves

Preparation
In skillet, cook bacon over medium heat until slightly crisp, about 5 minutes. Drain on paper towel–lined plate; chop.
Stir together chicken, bacon, tomatoes, blue cheese and mayonnaise until combined.
Divide chicken salad among tortillas; top with arugula. Fold in sides; roll up.
