Hawaiian Pork Meat Loaf
Crushed pineapple and a hoisin glaze provide a tropical twist to this ultra moist meat loaf. Serve with rice and steamed sugar snap peas for a dinner your whole family will love.

Ingredients
3/4 cup (175 mL) fresh bread crumbs
1/2 cup (125 mL) drained,canned,crushed pineapple
1 egg, beaten2 green onions, thinly sliced
1 tbsp (15 mL) grated fresh ginger
2 cloves garlic, grated
1/2 tsp (2 mL) ground coriander
1/2 tsp (2 mL) salt
450 g lean ground pork
2 tbsp (30 mL) hoisin sauce
1 tsp (5 mL) unseasoned rice vinegar
Preparation
In large bowl, stir together bread crumbs, pineapple, egg, green onions, ginger, garlic, coriander and salt. Add pork; mix to combine. Shape into 7- x 4-inch (18 x 10 cm) log; place on foil lined rimmed baking sheet.Stir hoisin sauce with vinegar; brush all over loaf.
Bake in 375 F (190 C) oven until instant-read thermometer inserted into centre reads 160 F (71 C), about 45 minutes. Let stand for 10 minutes before slicing.
