Bacon, lettuce, turkey and cheddar are tucked into a whole wheat wrap for a delicious
and nutritious lunch that no one can resist!
I've been talking about my lunch dilemma a lot lately and how I struggle to find something to eat at lunchtime. I like having different things, not the same ole', same ole'. Well, that goes for my kids, too. They get tired of eating the same boring sandwiches every day and love variety. My lunch conundrum came at a perfect time since Milk Means More asked me to come up with a couple of recipes for a lunchbox makeover!
I pondered this challenge for quite awhile...I needed to make something delicious and healthy, but not ordinary. And, of course, it needed to have dairy in it as well. Dairy foods are full of calcium, protein, potassium, vitamin D and other nutrients. It's recommended that we have three servings of dairy daily, so adding cheese to your sandwiches is an easy way to get one of those servings. Add a glass of milk to your lunch and you've got an easy two!
I turned to my kids favorite foods when making this wrap. A riff on the traditional BLT, this sandwich combines bacon, lettuce, turkey and cheddar cheese, tucked into a whole wheat wrap, to make one heck of a lunch. And this wrap isn't just for kids. Adults will love it, too! (I think I've had this for lunch at least four times over the past week!)
I love how easy it is to put this wrap together in the morning. You can cook the bacon beforehand and keep it in the frig, or even use microwave bacon the day of. Just layer the ingredients into a wrap, add a bit of ranch dressing and voila! It's just that easy.
BLTC {Bacon, Lettuce, Turkey, Cheese} Wraps

Makes 2 Wraps
Ingredients:
(2) 8-inch whole wheat wraps or tortillas
4 slices cheddar cheese
4 slices thick cut bacon, cooked
6 slices deli shaved turkey
4 lettuce leaves
Ranch dressing
Lay the wraps onto a work surface. Layer two pieces of cheese, two slices of bacon, three slices of turkey and two lettuce leaves into the center of each wrap. Add a touch of ranch dressing over the ingredients. Fold the bottom of the wrap upwards, then roll it up, starting from the right side. Wrap in plastic wrap or parchment paper before placing the wraps in lunchboxes.
