Apple Gruyere Grilled Cheese

1 small apple, cored and sliced thin
2 tablespoons unsalted butter
6 ounces Gruyere cheese, grated
1 teaspoon cinnamon
4 slices sandwich bread
DIRECTIONS
Core your apple, halve it, and slice it into thin slices.
Melt 1 tablespoon of butter in a large skillet over medium-low heat. Then add a slice of bread and let it soak up some of the butter. Add half of the cheese to the bread, followed by a row of apple slices. Sprinkle the apples generously with cinnamon and top with a second piece of bread.
Let the sandwich cook on that side for 2-3 minutes and then carefully flip the sandwich. Rotate the sandwich a bit so the melted butter in the skillet soaks into the second bread slice. Let the sandwich cook for another 2-3 minutes on the second side.
Continue to cook the grilled cheese, flipping every 30-45 seconds until the cheese is well melted and sandwich is browned on the outside. Repeat with second sandwich (or make two at the same time if your skillet is big enough.)
