Ham and Pepperoni Cheesy Hash

Chris is the king of making quick and delicious breakfast hashes out of cheese, potatoes and whatever else we have on hand. He always comes up with crazy and amazing combinations that always leave me wanting more. We happened to have some pepperoni and ham in the fridge, so Chris used them in this breakfast hash and it was mouth-wateringly delicious. The pepperoni added the perfect amount of salt to the dish, so make sure you only add a tad of seasoning salt (or none at all). This crispy, cheesy dish is perfect any morning. Enjoy!

Ingredients

  • 1/2 tbsp. olive oil
  • 1/4 cup pepperoni, sliced into quarters
  • 1/4 cup ham steak, diced
  • 8-10 baby potatoes, diced
  • 1/2 cup onion, chopped
  • Dash Lawry's seasoned salt
  • 1/4 tsp. black pepper
  • 1/2 cup Monterey Jack cheese, shredded
Preheat broiler to 500 degrees F.

In an ovenproof pan or a heavy cast iron skillet, add oil over medium heat. Add pepperoni and ham and  cook until browned, about 3-4 minutes. Remove from pan with a slotted spoon and set aside.

Add onion to the pan, adding more oil if necessary. Cook for 3-4 minutes, until the onion begins to soften. Add diced potatoes and continue cooking until potatoes are fork tender and begin to brown, about 5 minutes, stirring often.

Once the potatoes are cooked through, season with a small dash of seasoned salt and pepper. Add pepperoni and ham back into the pan and toss to combine.

Sprinkle cheese over top. Transfer the skillet to the oven under the broiler. Let sit for 2-3 minutes or until completely melted. Keep an eye on the skillet since the cheese can brown quickly!

Carefully remove from oven and serve immediately.
