Ingredients
Makes 2 servings
- 6 eggs
- 1 tbsp. reduced-fat milk
- Salt and pepper, to taste
- 1 cup leftover taco meat, reheated
- 1/2 cup Mexican blend cheese, shredded
- Light sour cream
- Salsa
Sprinkle the cheese over top of the eggs. Place under a broiler for 2 minutes, or until cheese is melted. To serve, top with sour cream and salsa, if desired.
