Grilled Asparagus and Tomatoes in a Kalamata Olive and Feta Vinaigrette
Here is a super easy and tasty way to enjoy asparagus where it's grilled and topped with tomatoes and a kalamata olive and feta dressing! The asparagus is grilled until it is just tender but still a little crispy and a little charred giving it a hint of smokiness which is just fabulous when combined with the juicy tomatoes and the tart and salty kalamata olive and feta dressing. The dressing is nice and hearty with large chunks of both kalamata olives and feta along with bits of tangy red onion and plenty of oregano. This asparagus dish is fabulous as a side or even as a light main straight off the grill and if you have any leftovers, slice the asparagus and it makes for a great salad for lunch the next day!
