I can't say enough about how I enjoy trying new foods especially when the food is a healthy choice like Quinoa, now quinoa is a grain like crop which is closely related to spinach, this would explain it's high protein and best of all it lacks gluten. The quinoa seeds are generally cooked like rice and it has been labeled by some as a super food not only high in protein but also fiber, magnesium, iron and calcium.

I looked around to find some foods that I would enjoy with the quinoa and with my taste leaning towards fish, tuna seemed like the best choice after some research but not just any kind of tuna, canned tuna with spicy thai chili flavouring. The quinoa will stick to the tuna and some fruit and vegetables added will give you an added boost of flavour and have your taste buds quite content.

Quinoa Thai Tuna Recipe
Servings: 2  Prep Time: 5 minutes  Cook Time: 10 minutes


Ingredients
2/3 cups of quinoa
1 1/2 cups of water
2 cans of flaked light tuna (spicy thai chili flavour)
1 cup baby carrots, sliced into coins
3 tbsp of lime juice
1 sweet mango, chopped into cubes
1 tbsp of garlic powder
1 green onion, chopped

Directions:

1- Rinse quinoa in water.
2- In a large sauce pan, add water and bring to a boil.
3- Add quinoa and reduce heat to simmer, cover and cook for 3 minutes and then set aside for 2 minutes, drain any excess water.
4- In a saute pan, heat tuna for 90 seconds stirring constantly not to stick.
5- Add lime juice to quinoa, stir in tuna and add mango, garlic powder, green onion and carrots.
6- Heat quinoa mixture for another two minutes, stirring to mix all ingredients.
7- Enjoy !!!
